Cumin Spiced Carrot & Cashew Salad. Roasted cashew and walnut chunks, fresh coriander with shredded carrot in a dressing of toasted cumin spice. There is just enough cumin seed for a fragrant note without thinking, ‘curry’. All our salads come undressed with the dressing in a separate pot, just so it will keep if you don’t eat it right away.
Serving suggestion: for lunch or a light evening meal, top with butter beans. Crunchy dryish bread would be good. Some homemade melba toast would be nice.
This portion comfortably feeds 2 adults. Leftovers should be covered and put into the fridge. This salad will be good the next day.
