Serving two people with generous portions, this is Heathen Vegan Gourmet Madras – medium spicy*, hearty and rich. Fresh-roasted fennel seeds, fenugreek seeds and peppercorns are ground to make our own Madras curry spice, and then into the oven with caramelised onions, garlic and ginger to slow-cook; it’s a slow-cooked affair because something happens to the coconut milk after 4 hours; it loses the coconuttiness and becomes a gorgeous creamy sauce. With Hodmedods’ Carlin peas, cauli. and green beans.
To lift the and refresh the palate we’re sending our Cardamom and Lemon Dhal side dish along with rice.
*We’ve reduced the chilli heat in this dish so it’s only just medium spicy hot…
