This stew came out of a quiet and calm evening following my First Climb which happened to be at Omis, Central Croatia. During travels so far, I’d been reading recipes for Dalmatian Stew and Fis Paprikas and wanted to create a hearty but light dish. Is hearty and light a culinary enigma?
After the climb, which I’ve written about here, we’d left Omis behind and driven up some twisty roads and pulled off into ‘Green All Around’ for the night. With some rain pattering down on the roof, I felt calm and quiet and cooked this dish and first go it was exactly as I wanted it… Holed up in the campervan, I caramelised onion petals, garlic slices, chunks of carrot and red pepper, and then added my own blend of paprika, smoked paprika, cinnamon, cumin and oregano. In the sauce are refreshing and cleansing celery, along with borlotti beans.
Cosied up in the van with bowls of Omis Stew served on rice, I felt cocooned, safe and extremely happy. I hope this dish makes you feel happy too.
Basmati rice is good for this.

This new dish is another winner. We enjoyed it with garlic bread and rice. The take-away system worked very well. The food was freshly prepared and still piping hot after our 10 minute walk home.
