Tarta de Santiago-Galicia is sublime and it keeps on giving. It is flavoured with orange and lemon zest and there is ground almond for richness. It’s got a zesty drizzle on top.

- Cut off a big wedge and eat it down whilst waiting for the espresso machine to warm up. There is no better breakfast especially after walking the dogs in the pouring Lake District rain
- Get a little bit more sophisticated – eat a more delicate slice with a fork along with Earl Grey for afternoon tea. The flavour would work with Lapsang too.
- Cut off a really thick slice, then cut that slice into fingers. Pile the fingers on a plate, give yourself a mug of cocoa and settle down for a quality hygge moment
